I found this recipe for Lemon Poppy Seed Waffles in a recent issue of Southern Living. They are pretty easy to make and taste very good. They have a nice, light texture. The recipe recommends topping with a blackberry and syrup mixture, but I used blueberries. I had some frozen ones in my freezer and just thawed them out. They tasted good with the waffles too!
