This is one of my go-to salads. It's easy, delicious, and most of the ingredients I keep on hand. It's also great for taking to people who need a meal because you can put all the ingredients in separate containers and let them assemble it how they like.
Top spring mix with the following:
- Dried cranberries
- Walnuts
- Crumbled goat cheese (or feta)
- Sliced pears or green apples (not in this picture, I didn't have any that day)
- Pepper
- Dressing-I like either a raspberry-walnut vinaigrette, a balsamic vinaigrette, or my new favorite, Trader Joe's Cranberry, Walnut, & Gorgonzola (below).
